This class is designed to help individuals and families develop healthier eating habits simply and realistically, without the stress of prior health knowledge. Based on trusted guidance from sources such as the USDA's MyPlate and the Dietary Guidelines for Americans, this class breaks down nutrition into easy-to-understand concepts that you can apply in your daily life. You will learn how to plan and prepare meals ahead of time (meal prep) to save money, reduce stress, and make healthier choices throughout the week, and you will leave with recipes for a week’s worth of meals. The class focuses on practical strategies that fit busy schedules and budgets.

About the instructors:
Hi everyone! My name is Ashlyn Davis. I am a senior here at Ole Miss majoring in Dietetics and Nutrition with an emphasis in Health Sciences and minoring in Public Health. I am originally from New Orleans, Louisiana and plan to attend nursing school back home at Tulane University or Mercer University in Atlanta, Georgia after graduation!
Hi!! My name is Julia Morales. I am a sophomore here at Ole Miss, and my major is Allied Health Studies Pre-Nursing with a Minor in Nutrition. I was born and raised in Dallas, Texas, and plan to go back there once I graduate. I want to later go back to school and get my master's to become a Nurse Practitioner.
Building a Balanced Plate
- What foods belong in each group:
- Protein (chicken, beans, eggs): helps build and repair muscles
- Carbohydrates (rice, pasta, bread): gives your body energy
- Whole grains (brown rice, oats): keeps you full longer and supports digestion
- Fruits & vegetables: provide vitamins to keep your body healthy and prevent illness
- Dairy or alternatives: supports strong bones
Understanding Portion Sizes
- How much of each food group you actually need
- Simple visual tips (like using your hand or plate as a guide)
Why Balance Matters
- How eating a mix of foods helps with energy, focus, and long-term health
- What happens when certain food groups are missing
