NUTRITION
INTRODUCTION
Family and Consumer Sciences 311 is a course designed to present the basic facts and principles of nutrition, and to explain how this knowledge may be utilized to build strong healthy bodies. the nature of this study requires exploration into the social, psychological, biological and physical sciences; sine these related sciences greatly influence the individual's dietary selections. Emphasis is placed on the interrelationship of the nutrient's function with the digestion of food and the metabolism of nutrients.
This course offers three (3) hours of academic credit.
MID-COURSE TEST AND FINAL EXAMINATION
The student will take a Mid-Course Test and Final Examination at a physical
location in a college or university setting. Detailed instructions and
Mid-Course Test and Final Examination applications are included in the
online syllabus. Information regarding tests and procedures can be found in General Information.
INSTRUCTOR
Dr. Kathy Knight is an associate professor of family and consumer sciences. She received her B.A. from the University of Mississippi, her
M.S. from Mississippi State University and her Ph.D. from Auburn University.
